Trained Italian patissier Debora founded her cake business in 2008, when friends and work colleagues encouraged her to start selling her home-baked traditional Italian biscuits. Before long, an order for 1200 cupcakes (that she had to bake in the tiny oven of her flat) made her realise it was time to find premises! The Biscotti Di Debora range quickly grew to encompass distinctive Italian-style celebration cakes, dainty pasticcini, unusual Italian wedding cakes, spectacular croquembouche towers, and more.
The focus is firmly on flavour and texture – there is no heavy buttercream or fondant icing, but rather the soft creaminess of mousses, creme pat and fresh cream. Key ingredients are fresh fruits, high-quality chocolate, hazelnuts, pistachios and almonds, and sponge is light, fluffy Genoise. Italian stalwarts such as the ever-popular Tiramisu cake are complemented by signature creations that are as stylish as they are delicious. Many can be made without gluten.
Celebration and other cakes can be ordered from the company’s web site for birthdays, anniversaries and any special occasion, and are ready in as little as four days. Biscotti Di Debora is delighted to help with corporate hospitality and gifting, too.
The Dry Drayton bakery also opens once a week to offer handmade Italian patisserie and a selection of luxury doughnuts, with two new ‘guest’ flavours per month. For many regular customers it’s now a Saturday ritual to browse for a haul of weekend treats, a selection of patisserie for parties and gatherings, or a box of delicacies to gift on visits to friends and family.
Recent highlights for the business include providing cakes for several Cambridge college May Balls and being shortlisted for a Velvet Magazine Food & Drink award (nominated by readers) in the ‘Best Food Producer’ category for Cambridgeshire.
